The Chap Shiraz Cabernet
Wine
Mr. Riggs The Chap Shiraz Cabernet is a blend of McLaren Vale Shiraz, grown on the Piebald Gully Vineyard in the cooler Clarendon locale, and Coonawarra Cabernet Sauvignon.
The blend components are fermented in traditional open fermenters. Following pressing, they complete their fermentation in new and seasoned oak, mostly French with a small proportion American.
The wine matures for 22 months in barrels, with the separate parcels blended three months prior to bottling. The wine is then bottled aged, only released as it nears its prime.
Deep inky red, Mr. Riggs The Chap Shiraz Cabernet is full bodied with layers of dense dark fruit flavours, oak and structured tannins. Cellaring potential is 10 years.
